Masala Vada / Paruppu Vadai Recipe
Ingredients
1. Chana dal - 1 cup (soaked 1 hour)
2. Shallots - 10-15 nos (finely chopped)
3. Rice flour - 1 tbsp
4. Green Chillies - 3 tbsp (finely chopped)
5. Few Curry leaves (finely chopped)
6. Few Coriander leaves (finely chopped)
7. Salt
To Grind :
- Piece of ginger
- Red Chillies - 4 nos
- Hing / Asafoetida - 1/4 tbsp
- Fennal Seeds - 1 tbsp
- Salt to Taste
- Cloves - 2 nos (optional)
Steps:
- Soak the chana dal for 2 hours.
- Strain the water and add the dal to a mixer.
- Add a piece of ginger,4 red chillies,1 tbsp of fennel seeds,1/4 tbsp hing or asafoetida ,salt,and cloves(optional) and pulse them to a course mixture.
- Now add 1/4 cup of shallots,3 green chillies chopped,1 tbsp of rice flour, few curry leaves chopped few coriander leaves chopped and salt.
- Now make a flat patties and deep fry to brown.
